· Servings: 1-2 people
· 1 cup of quinoa
· 1 cup chopped parsley
· Juice of 1-2 lemons (depending on how tangy you like it ☺)
· 2-3 minced garlic cloves
· 2 tablespoons olive oil
· Dash of sea salt and/or Himalayan salt
· Cook the quinoa first. 1 cup quinoa to 2 cups water---should take around 20 minutes. Make sure quinoa is clean and rinsed.
· While quinoa is cooking, chop up parsley, juice 2 lemons and put in cup, mince 2-3 garlic cloves, and get olive oil ready. When quinoa is finished cooking, mix all the other ingredients in together! Enjoy☺
