Pumpkin Curry

Vegan, Vegetarian, Organic, Gluten Free
A grounding, vegan dish laden with the the most nutrient rich vegetable: kale. Serve with a whole grain of your choice!
What to do:
• Mince garlic and add fresh onions & ginger with coconut oil to heated wok
• Add two diced sweet potatoes, two tablespoons of red curry, 2 tsps of cinnamon, turmeric, and cumin, one can of pureed pumpkin, one can of organic coconut milk and one can of beans (Cook your own beans for more nutrients and flavor)
• Simmer for 20 minutes and add kale at the end
