Sweet Potato Chickpea Burger

There are so many veggie burger recipes out there, but this is one of my favorite! These mouth watering veggie burgers are full of flavor, fiber, fat and protein. There is also a magic sauce in this recipe!
What to do:
Ingredients
1 tbsp of ground flaxseed
3 tbs water
1 large baked sweet potato, skin removed
1 1/2 cups of cooked chickpeas
1 1/2 cups rolled oats
1 tsp turmeric
1 tsp group cumin
1/8 tsp freshly ground black pepper
1-2 garlic cloves
1/2 tsp cayenne
juice of 1/2 lemon
1 tsp apple cider vinegar
4 gluten free seeded buns to serve (gluten free if you want)
Preheat oven to 40 degrees Farenheit . Make flax egg by mixing the ground flaxseed with the water. Let sit for 15 minutes
In food processor combine the flax egg and retainer burger ingredients except bun and magic sauce in blender.
From the Mixture place into four balls and place them on baking sheet. Cook for 25 minutes, flipping them half way.
Serve burgers on toasted buns, topped with magic sauce, avocado, arugula, cilantro, and sliced cherry tomatoes.
Magic Sauce
Ingredients
3/4 cup raw cashews
1/2 cup water
1 tbsp apple cider vinegar
1 tbsp tomato paste
1 tbsp monk fruit maple syrup or pure maple syrup
2 tsp of stone-ground mustard
1 tsp turmeric
1/2 tsp of salt
4 tsp pickle relish
In a food processor blend all ingredients besides relish. Process until smooth, and solid in relish.
