Thai Style Noodles

Main Dish

Organic, Vegetarian, Vegan

This is a delicious and easy to medium difficulty dish that is comforting and super tasty! I made it vegan but you can add chicken to this dish if you eat meat!

What to do:

Thai sauce
Blend in food processor: 1/4 cup of veggie stock
1/4 rice vinegar
2 tablespoons of apple juice
2 tsp of lemon juice
1 tsp of miso paste
1 tsp of paprika
1 tsp of Chinese five-spice powder
1 tbs of maple syrup
1 tbs of liquid aminos
2 tbs of thinly sliced fresh basil leaves

Cook 8 ounces of rice or soba noodles-follow package instructions

Heat in a wok or large sauté pan:
1 tbs of olive or sesame oil
1/2 cup sliced leeks or onions
Pinch of red pepper flakes
1 tsp ground coriander
2 tbs of veggie stock
1 garlic give, minced
2 tbs of fresh ginger
Add last 2-3 minutes:
2 tbs of toasted sliced almonds
1/4 cup of chopped green onions and 2 cups of mung bean sprouts
1/4 cup chopped fresh cilantro

Add Sauce to wok and simmer 2-3 minutes. Add rice noodles and stir everything together. You can add cooked chicken, tofu, and steamed veggies. I added blanched kale with a little lemon as a side! Enjoy!
